Instructions
- In a large bowl, whisk together the cake flour, baking powder, baking soda, salt, cocoa powder and brown sugar until combined.
- In a separate bowl, stir together the eggs, milk, oil and vanilla extract until light and airy.
- Gradually add the wet ingredients to the dry ingredients and mix until just barely combined. Do not overmix!
- Add in desired amount of red food coloring and stir until evenly distributed throughout the batter.
- Heat an oiled griddle or skillet over medium heat. Using an ice cream scoop or measuring cup, drop about ¼ cup of batter onto hot surface for each pancake. Flip when bubbles start to form on the surface of each pancake (about 4 minutes). Cook for another minute or two before removing from heat.
- Serve with your favorite toppings such as butter and syrup or powdered sugar and enjoy!
