Instructions
- Preheat the oven to 400 degrees.
- Line a baking sheet with parchment paper.
- Combine the sugar and 1/2 teaspoon of the cinnamon in a small bowl.
- Arrange the tortillas on a baking sheet; brush with half of the melted butter and sprinkle with half of the cinnamon sugar.
- Turn the tortillas; brush with the remaining butter and sprinkle with the remaining cinnamon sugar. Gently fold the tortillas in half; place toothpicks in top to hold in place, if necessary.
- Bake for 10 minutes or until lightly browned and slightly crisp, turning halfway through baking.
- Remove the toothpicks and cool. Combine the cottage cheese, honey and remaining 1/8 teaspoon cinnamon in a small bowl. Spoon the cottage cheese mixture into the tacos; top with fresh fruit and serve.
